Storing cement, and buying the right amount
Cement's enemy is moisture, and it takes it from the air as readily as from the ground. Bags should be stacked clear of the floor on planks or a raised platform, kept away from outside walls, covered, and used in the order they arrived. A bag that has gone hard in lumps has already taken up moisture and should not be argued with.
Buy by the stage rather than for the whole house. Cement does not improve in storage, and a site rarely has the dry covered space to keep months of it properly. Buying for the stage in front of you keeps the material fresh and the money in your pocket longer.
Curing decides how much of the strength you actually get. Concrete and plaster need to be kept damp for days after they are laid, in the heat especially. It is free, it is the single most neglected step on most sites, and it makes more difference than any decision made at the counter.
Plan the delivery around your storage, not the other way round. There is no benefit in having more bags on site than you can keep dry.
